Poor Man's Chicken Stew

I don't have a picture, and it's not that exciting to look at, anyhow, but the following recipe was our dinner last night.

4 cups water*
2 pkgs chicken flavor Ramen noodles*


4 boneless, skinless chicken thighs
1 - 14.5oz can tomato sauce
2.25c frozen mixed vegetables of choice (we use peas, carrots, and corn)
Salt and pepper to taste
Any desired additional herbs (I didn't use any, but I was also in a rush and didn't want to dig through the cabinet)

*or equivalent weight dry pasta and four cups chicken broth/stock

Mix water and the seasoning packets from the Ramen noodles (if using). Bring to a boil then reduce to a simmer. Put chicken in the water and allow to poach for 10-15 minutes or until cooked through. Remove chicken, allow to cool, and cut into 1/2" dice.

Add tomato sauce to liquid in the pot and return to a boil. Add the noodles and cook until done. Return chicken to pot. Place 1/2 to 3/4c vegetable in each bowl and top with noodle mixture. Serves 2-4.
